Recipe Of The Month: Solly's Simple Chicken Soup

 

INGREDIENTS:

• 750g chicken breast

• 3 med cloves garlic

• 1 large onion

• 1/2 head cauliflower

• 2 carrots

• 4 large celery stalks

• 1/2 head broccoli

• 1 tin tomatoes

• 4 cups of chicken stock (can use vegetable)

• 2 cups of water

• 2 tablespoons finely chopped fresh continental parsley

• 6 sprigs fresh thyme, leaves picked

• Sea salt flakes

• Cracked pepper

METHOD:

  1. Brown the chicken, onion and garlic quickly in a hot pan using a little olive oil.
  2. Add to slow cooker with all the vegetables (except the broccoli), tinned tomatoes, herbs and seasoning.
  3. Cook for 4 hours in slow cooker.
  4. Add broccoli 30 minutes prior to serving.
  5. Use some additional fresh parsley for garnish.
